Culinary experience and city tour of Lima.

Today we will make a space to enjoy Peruvian gastronomy at the hands of one of the best culinary guides in Peru, chef Penelope Alzamora. Visit a local market accompanied by Penelope. Aromas, colors, and flavors will come to meet you and surprise you with so much delight and variety. Huge corn, shiny chili peppers, varieties of potatoes of different colors; one by one, they will choose the ingredients of the dish they want to prepare. After you have everything, you need, it’s time to get to work. Once in Penelope’s kitchen, take part in an entertaining class in which you will prepare lunch that you will later enjoy accompanied by the
famous Pisco sour. Enjoy!

Go back in time with a tour of the Historic Center of the city, discover the most representative buildings of the colonial and republican eras, and visit the oldest plot of land in America, continuously inhabited by the same family: Casa De Aliaga.

At the scheduled time, transfer to the airport to take the flight to Cusco.

Flight Lima – Cusco (not included). We recommend arriving in Cusco before 10:30 am.

Full day tour to Sacred Valley with lunch in a colonial hacienda.

Welcome in the city of Cusco, then we will go to the Sacred Valley. We will discover Pisac, a beautiful place where the Inca and the colonial coexist perfectly and are part of the daily life of its inhabitants. Tour this picturesque town, famous for its craft fairs and where you can buy the most delicate ceramics, textiles, and jewelry.

We will make a stop for lunch at a colonial hacienda. Discover the legacy of three generations of one of the most traditional families of the Sacred Valley. Learn about the generational experiences and the work that lies behind production of Cusco’s giant white corn, a unique species that only grows in this area. And finally, enjoy a unique experience in the form of traditional cooking based upon local organic products, the legacy of farmers devoted to their land.

Full day visit to the Sacred Valley: archaeological site of Moray, saltpans of
Maras and Manuel Choqque potato fields.
This morning, we will take the road to the archaeological site of Moray, used as an agricultural laboratory,
its system of circular platforms that descend 150 m below our feet will confirm the wisdom of the Incas
when building masterpieces in harmony with nature. We will continue our tour until we reach the saltpans
of Maras. Exploited from the time of the Inca to today, this salt pan will surprise you with its white steps
that descend abruptly against the green slopes of the hills.
Visit to the potato fields of Manuel Choqque, an agronomist included in the 50 Next of The World’s
50 Best Restaurants, as one of the young talents that are shaping the future of gastronomy. Together with
Manuel, we will discover more about his research. He will tell us about the nutritional and culinary benefits
of potato varieties, as well as his extensive breeding work. We will have the opportunity to try their own
creations—our favorite: Miskioca, a wine from another Andean tuber—and we will learn how to prepare the
ideal spicy sauce to accompany the potatoes, uchucuta.
This is an intimate experience with Manuel Choqque and his family on his farm, where we will get to know
and savor potatoes with new colors, flavors, and textures that are revolutionizing haute cuisine.

Overnight in the Sacred Valley

Gastronomic legacy in the Sacred Valley.
We will begin the day by visiting the organic garden of the Sol y Luna hotel to learn more about the
relationship between Andean culture and traditional cuisine. Accompanied by the hotel chef, we will
take a walk-through a nearby farm and the local market, which will transport us to the heart of Peruvian
gastronomy.
Enjoy a delicious lunch while appreciating a Peruvian Paso Horse show. This sensory journey goes far
beyond pleasing the palate, since you will be able to witness a spectacular equestrian exhibition that
testifies to our Creole heritage.
At the end, we will transfer you to the station to board the train to the town of Machu Picchu. Upon arrival,
you will be assisted and transferred to your hotel.
To end the day, we will have some ceviche and cocktail classes.

Visit to the citadel of Machu Picchu.
In the morning, we will visit Machu Picchu. The citadel of Machu Picchu, rediscovered in 1911 by Hiram
Bingham, is one of the most beautiful and enigmatic of the world’s historic sites. From the early 1400s, the
Inca people used this Andean mountaintop to build several hundred stone structures, but legends and
myths indicate that Machu Picchu–meaning “old peak” in the Quechua language–was revered as a sacred
site much earlier. Machu Picchu is considered one of the New Seven Wonders of the Modern World. Its
architectural beauty, its spectacular natural setting, and the energy contained in its enigmatic structures,
are truly breathtaking.

Finally, we will take the train with destination to the city of Cusco.

City tour of Cusco.
We will visit the archaeological site of Sacsayhuaman. This colossal structure built with huge carved rocks
joined with absolute accuracy is an astounding sample of the Incan military architecture. Undoubtedly, the
greatest architectonic work of the Tahuantinsuyo. Then, we will continue to the bohemian neighborhood
of San Blas, inhabited by renowned artists.
Lunch at Pachapapa restaurant.
After enjoying the delights of Cusco’s cuisine, we will head towards the Plaza de Armas. Enjoy an
incomparable view of the Jesuit Church, which was built over the old Amarucancha, the palace of the Inca
Huayna Capac. There, we will take a guided tour to discover the mysteries of the Cathedral and admire
its lovely atria and priceless 17th and 18th century paintings of the Cusco school. Finally, we will continue
with the visit to one of the most impressive buildings of Inca Cusco: the Koricancha, “golden enclosure” in
Quechua. Temple dedicated to the worship of the Sun god, who, according to the stories, looked, inside,
entire walls covered with gold.

At the appropriate time, we will transfer you to the airport to board the flight that will take you to Iquitos.
Flight Cusco – Iquitos (not included).
Aqua Nera 4D / 3N (High water – Nov. to May | Low water – June to Oct.).
Iquitos – Amazon River.
Upon your arrival, receive a warm welcome at Iquitos International Airport by our crew and enjoy lunch
at a local restaurant or box lunch en route (depending on your arrival time). Then, private transfer to the
embarkation port.
In the early evening, embark the Aqua Nera and settle into your generously sized suite as you begin one of
life’s greatest adventures. Following an introduction to our naturalist guides and a routine safety drill, gather
at the restaurant for the first of many Amazonian cuisine experiences created by Aqua Nera consulting
chef, Pedro Miguel Schiaffino.

Yarapa River – Clavero Lake.
Aboard our comfortable skiffs, we set sail from the Amazon River to the Yarapa River. Ready your
binoculars to spot tropical songbirds, black collared hawks and sloths. Line-fish for Amazon’s notoriously
ferocious piranhas while our naturalist guides share stories of Lake Moringo.
In the afternoon, we will sail on to Clavero Lake where villagers rely on traditional dugout canoes to get
around. Swim in the lake’s calm waters or visit native residents of Amazonia who welcome you to their
community with open arms.

Yanallpa River – Dorado River.
We explore the black water tributaries of the Yanallpa River by skiff, disembarking to walk deep into the
wildlife-rich Amazonian rainforest. Later, we board the skiffs again to cruise along the El Dorado River for a
dusk excursion in search of exotic nocturnal creatures.

Check out at 08:30 am.
In the morning, take a guided visit to the local market and marvel at the regional produce of the
Peruvian Amazon, and sample exotic snacks if you wish. Return to the Aqua Nera for breakfast before
disembarkation.
En route to the airport, visit the Manatee Rescue Center, where orphaned Amazonian manatees rehabilitate
before they are released back into the wild.
